From Finance to Frozen Dessert
A Lifelong Dream
Our founder, Paul N. Nasrani, discovered his love for ice cream on a small Pennsylvania farm during summers of his youth. After long days, he always found the energy to help churn a batch of fresh, homemade ice cream. The flavors, taste, and quality were unmatched—and that’s where the dream began.
Paul’s career initially took him into accounting and finance in New York City, where he eventually became CFO of a mid-sized corporation. But the ice cream dream never melted away. In 2002, he began making small-batch ice cream in his Manhattan apartment, sharing it with friends and coworkers who couldn’t get enough. Soon, his tiny freezer couldn’t keep up. Determined to learn more, Paul spent vacations visiting ice cream shops and attending dairy programs at Penn State and Cornell.
Then one cold winter Sunday in Grand Central Station, he stumbled upon an ice cream shop auction—and a few hours later, was wheeling a commercial batch freezer down 42nd Street. Within a year, Paul left his finance career behind and headed north to make ice cream full time, turning his lifelong passion into Adirondack Creamery.

Early Operations
With his first commercial freezer in hand, the next step was finding a place to bring his ice cream dream to life. Paul thought back to family vacations at Silver Bay on Lake George, where ice cream was a nightly tradition. The century-old Silver Bay Store—once home to on-site ice cream production in the 1940s and ’60s—became the perfect place to start.
In 2004, with the founding of Adirondack Creamery, Paul brought ice cream making back to Silver Bay, serving fresh scoops to more than 300 guests a night. He also created hands-on programs for children to churn their own ice cream using traditional hand-crank machines.
In the summers that followed, Adirondack Creamery partnered with Silver Bay to offer internships for international students studying dairy and food science—inviting them to spend the season developing new flavors, producing ice cream, and gaining real-world experience in the Store.
