Miso Caramel Apple Ice Cream Sandwich
Sweet caramel, a touch of savory miso, crisp apple, and creamy Syrian Date & Walnut ice cream — the fall combo you didn’t know you needed. 🍂
Crisp, chewy, sweet, and just a little bit salty — this dessert takes everything cozy about fall and wraps it between two cookies.
Ingredients
For the Miso Caramel:
- ½ cup granulated sugar
- 2 tbsp water
- ¼ cup heavy cream (warm)
- 2 tbsp unsalted butter
- 1 tsp white miso paste
- Pinch of sea salt
For the Apples:
- 1 large apple (Honeycrisp or Fuji), peeled and diced
- 1 tbsp butter
- 1 tbsp brown sugar
- ½ tsp cinnamon
For Assembly:
- Adirondack Creamery Syrian Date & Walnut Ice Cream
- 12 soft oatmeal or brown sugar cookies, or biscuits
- Extra miso caramel for drizzling
Instructions
- Make the miso caramel: In a small saucepan, combine sugar and water over medium heat. Cook until the sugar dissolves and turns a deep amber color. Remove from heat and slowly whisk in warm cream (it will bubble!). Stir in butter, miso paste, and salt until smooth. Let cool completely.
- Caramelize the apples: In a skillet, melt butter over medium heat. Add diced apples, brown sugar, and cinnamon. Cook 5–6 minutes, until tender and lightly golden. Let cool.
- Assemble the sandwiches: Scoop Syrian Date & Walnut Ice Cream onto one cookie. Spoon a little caramelized apple and a drizzle of miso caramel on top. Press a second cookie gently to sandwich it together.
- Freeze to set: Place sandwiches on a parchment-lined tray and freeze at least 1 hour before serving.
- Serve and savor: Drizzle with more miso caramel if you dare — this one’s rich, decadent, and impossible to forget.
